Baked Tomato Chorizo Egg with Chickpea and Spinach

BAKED TOMATO CHORIZO EGG WITH CHICKPEA AND SPINACH

Ingredients
  1. 50 grams chorizo slices or ham
  2. 1 tin chickpeas – drained and washed
  3. 2 cloves of crushed garlic
  4. 2 tsp smoked paprika
  5. 1 tsp fresh chilli diced
  6. 1 tin chopped tomatoes
  7. Sea salt and cracked pepper
  8. 10 cherry tomatoes
  9. 8 basil leaves
  10. Handful baby spinach
  11. 4 organic eggs
  12. 50 grams feta cheese
  13. Sourdough to serve
Instructions
  1. Pre heat the oven to 180 degrees C.
  2. In a large frying pan with stainless steel handles, fry together chorizo, chickpeas, garlic, paprika, chilli with some olive oil until garlic is golden.
  3. Mix in tomatoes, cherry tomatoes, salt and pepper.
  4. Remove from heat and stir through torn basil leaves and baby spinach.
  5. With a spoon create 4 small holes in the mixture for the eggs to go into.
  6. Crack eggs into the holes and sprinkle feta on top
  7. Bake in the oven for 15 minutes until eggs are cooked to your liking.
  8. Serve hot with toasted or fresh sourdough and sprinkle some more torn basil leaves on top and enjoy!
