Beetroot & Chickpea Fritters with Apple Tzatziki

My girlfriend Ali is always making beetroot fritters for her daughter and when ever we go to visit her the twins absolutely love them!

I started experimenting with different combinations to make these and this was by far my favourite. I absolutely loved them and the twins did too, complete with apple tzatziki these are a great healthy snack.

What you’ll need

3/4 tin chickpeas
1 large beetroot
1 large carrot
1 small sweet potato
1 spring onion
1 tsp chopped mint
2 tbsp lemon juice
1/4 tsp cumin
1/4 tsp ground coriander
1/2 tsp paprika
1/2 cup wholemeal flour
2 eggs

For the apple tzatziki

1 grated apple
1 tbsp lemon juice
1/4 tsp chopped mint
3 tbsp natural yoghurt

– Pre heat the oven to 160 degrees C
– In a bowl add grated zucchini, sweet potato, carrot and beetroot
– Chop chickpeas in half and add to the bowl with mint, lemon juice, spices, flour and eggs
– Mix everything together
– Heat coconut oil in a frying pan and fry tbsp sized fritters till brown on both sides
– Once fried place on a baking dish in the oven for 15 minutes so they become crunchy
– Grate apple and add to a bowl with mint, lemon juice and yoghurt
– Serve hot topped with tzatziki and enjoy!
