Colourful Christmas Quinoa Salad

DSC_0211I wanted to come up with a few more healthy side dishes to go with our Christmas dinner parties coming up and this salad is just perfect!

It is bright and colourful and filled with flavour. The sweetness from the orange and raisins and the crunch from the almonds and chickpeas complement each other perfectly with a hint of spice from the cumin vinaigrette.

The best part of this salad is that you can make it the day before and it will be perfect and ready to go for Christmas day.

What you’ll need

3 cups cooked quinoa
1 tin chickpeas
1 large grated carrot
1 punnet cherry tomatoes
1/2 cup raisins
2 oranges
3 spring onions
3/4 cup toasted crushed almonds
2 tbsp chopped flat leaf parsley
2 tbsp chopped coriander
3 tbsp chopped mint

For the cumin vinaigrette

1 1/2 tsp cumin
1 tsp orange zest
1 tsp dijon mustard
juice of 1 lemon
1 tbsp flaxseed or good quality olive oil
1 tbsp apple cider vinegar
1/2 tsp crushed garlic

How to

– In a large salad bowl combine cooked quinoa, raisins, drained chickpeas, grated carrot and halved cherry tomatoes
– Finely chop spring onion, mint, coriander and flat leaf parsley and add to the salad
– Peel the orange and chop into 1cm squares and add to the salad
– In a jar combine all the ingredients for the cumin vinaigrette and shake well
– Add 1/2 the vinaigrette to the salad and combine
– Refrigerate over night or for a few hours to let the vinaigrette soak in
– Just before serving add the toasted almonds and some more vinaigrette according to your taste and enjoy!
