Grape and Ricotta Bites

DSC_0419I first had these little bites of amazingness at my friends place, she had found the idea from pinterest – where so many great ideas are found!

I mixed the recipe up a little and added thyme and “marinated” the grapes a little in the mixture before baking

This combination of sweet and savoury works so perfectly together and is such an easy, yummy appetiser for BBQs, dinner parties or when friends drop by

What you’ll need

Baguette sliced into small bite size pieces
bunch of red seedless grapes
1 tbsp good quality olive oil
4 springs of thyme
Salt and pepper
1/2 cup of ricotta

How to

– Chop the grapes in halves and mix into a bowl with chopped thyme, oil, salt and pepper and set aside in the fridge
– Pre heat oven/grill to 180 degrees C
– Slice the baguette and toast under the grill until crisp on top
– Spread the ricotta over the toasted bread and add a spoonful of the grape mix on top
– Return to the oven and heat until the grapes are soft about 10 minutes
– serve warm and enjoy!
