Greek Nachos


I know I say this a lot but, this really would have to be my new all time favourite recipe!

I have been making this the last few BBQs we have had and it has been a huge hit each time, how did I not think of Greek nachos sooner!

This is a much healthier version to your typical nachos and much tastier.

What you’ll need (as a starter for 2-4 people)

1 bag plain corn chips or strips – I use the Mission plain corn chip strips
250 grams lamb mince
1 clove garlic
1 tbsp dried oregano
2 tsp dried thyme
1 tsp marjoram
1 tsp dried rosemary
1/2 tsp cumin
Salt and Pepper
1 cucumber
2 diced tomatoes
1/2 diced red onion
1/3 cup pitted kalamata olives
1 tbsp chopped parsley
1 tbsp chopped mint
1 block feta cheese cubed
1/2 cup natural yoghurt
1 clove garlic
Salt and pepper
1 tbsp lemon juice

How to

– Place corn chips on a platter and top with half of the diced feta
– In a bowl add diced red onion, cucumber, tomato, olives, parsley and mint and a dash of lemon juice
– Mix natural yoghurt, 1 garlic, salt, pepper and lemon juice and set aside
– In a frying pan add some oil, lamb mince, garlic, dried herbs and salt and pepper and mix through until lamb is cooked
– Add extra dried herbs if needed
– Sprinkle lamb over the corn chips
– Top with the tomato, olive mixture then the remaining feta
– Drizzle garlic yoghurt on top and enjoy they will be eaten up before you know it!
