Lentil Burgers with Tahini Dressing


We just got back from an amazing 4 day weekend in Phuket Thailand (keep posted for Thai inspired recipes to come!) We had absolutely no food in the house this morning so I put together these burgers for lunch with what little we did have and they turned out so yummy, I will defiantly be making these again.

This was such an easy meal to make and I just added anything I could find really. The twins loved them and I even dropped Tom a plate to his office for his lunch too so he didn’t miss out – again my anti vegetarian husband absolutely loved them asking me to make them for his lunch again tomorrow!

What you’ll need (Makes 4)

1/2 cup of red lentils cooked
1 cup of cooked pumpkin
2 spring onions
1 egg
1 spring coriander
2 wholemeal bread slices
1 grated carrot
2 tbsp chia seeds
1 clove of garlic
1/2 tsp curry powder
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp chilli flakes

For the tahini dressing

2 tbsp natural yoghurt
1 tbsp tahini
Juice of 1 lemon

handful of spinach to serve

How to

– Chop spring onions and coriander finely and add to a mixing bowl
– Blend bread to make bread crumbs and add half to the bowl
– Add grated carrot, chia seeds and herbs
– Add cooked lentils, pumpkin and egg and mix everything together
– Roll into burger shapes and roll in a little of the remaining breadcrumbs
– To make the dressing mix all ingredients together in a jar and shake
– Fry burgers in sesame oil for 2-3 minutes on each side or until golden browned
– Serve on a bed of spinach with tahini dressing on top and enjoy!
