Milk Making Choc Chip Cookies

After welcoming my 3rd beautiful child into the world just 8 weeks ago I have been quite busy to say the least! Running around after the twins all day and feeding baby Hallie 3 hourly has taken it out of me and has taken us all a little while to get into the swing of having 3 under 3!

We are now well and truly in a good routine, Eli and Livie love their baby sister Hallie and thanks to these amazing milk making cookies I’ve been able to keep my milk supply up and little Hallie is chubbing up nicely.

The ingredients in these cookies that help with milk production are thick cut oats, flaxseed and brewers yeast, they are also full of other healthy goodies like nuts, chia seeds and dark chocolate (yes dark chocolate is healthy, despite what my husband thinks!)

I give these to the twins as a special snack and they love them, they are the perfect energy and milk booster for busy mums, and the perfect healthy option for your toddler too.

What you’ll need
(50-75 cookies depending on what size you make them)

1 1/2 cups wholemeal flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3/4 cup peanut butter
1/4 cup almond butter
120 grams butter – softened
2/3 cup caster sugar
1/2 cup firmly packed brown sugar
2 tsp vanilla extract
2 1/2 tbsp brewers yeast (this stuff smells horrible, don’t worry you cant taste it one bit once its cooked!)
1/4 cup chia seeds
1 cup flaxseeds (whole flaxseeds not ground)
1/4 cup golden flaxseeds
1/3 cup & 1 tbsp water
2 eggs
1 1/2 cups of thick cut oats
2 1/4 cups of dark chocolate chips
3/4 cup walnuts chopped
1/4 cup pecans chopped
1/4 cup almonds chopped (you can really use any nuts you prefer as long as you have 1 1/4 cups, hazelnuts and brazil nuts also work well but this is my favourite combo)

How to

– Pre heat the oven to 180 degrees C
– In a bowl combine flour, baking soda, salt and cinnamon and set aside
– Using an electric mixer or beaters combine peanut and almond butter, butter, sugars, brewers yeast, vanilla, chia seeds, flaxseeds and water and beat together on a medium speed until fully combined
– On low speed beat eggs into the mixture
– Gradually add flour mix and beat until fully combined
– Using a spatula, mix through chocolate chips and chopped nuts
– Lastly fold through the oats until fully combined
– Spoon the cookie mixture onto a baking tray lined with baking paper, you want the cookies to be about the size of a tsp or a little bigger and about an inch apart as they will spread out when cooked
– Bake for 8-12 minutes or until slightly browned like in my picture
– Once cooled put the cookies in air tight containers and enjoy!
