Beef and Portobello Mushroom Burgers with Pesto Aioli, Parmesan and Spicy Relish

I love portobello mushrooms and I love burgers (who doesn’t right!) today I decided to make burgers with portobello mushrooms in replace of burger buns, making it slightly healthier and ten times yummier than a normal burger!

I paired the mushroom buns with a beef burger pattie toped with melted parmesan, spinach, tomato, pesto mayonnaise and spicy relish and served them with kale chips. They were so juicy and absolutely delicious you have to give these a try!

What you’ll need (makes 2 burgers)

4 portobello mushrooms
1 tbsp balsamic vinegar
2 burger patties (I made the patties weeks ago and froze them but you can make your own or use shop bought burgers)
1 tomato
1 cup of spinach
Parmesan cheese
4 tbsp of tomato relish (see my relish recipe in snacks)
4 stalks of Kale
1 tbsp olive oil
Sprinkle of sea salt

Pesto aioli
2 tbsp Mayonaise
1/2 clove of garlic
1 tsp lemon juice
1 tbsp pesto
Salt and pepper

How to

– Pre heat the oven to 200 degrees C
– Cut the stalks out of the kale and cut into 2 inch pieces, wash and drain
– Mix olive oil and salt with kale and lay out on a baking tray lined with baking paper
– Remove stalks from portobello mushrooms and put a dash of balsamic in each one, place on the oven tray with the kale
– Put in the oven for 10 minutes
– Slice tomato and parmesan cheese
– Mix all the pesto aioli ingredients together and set aside
– Cook burger patties in a pan and add the parmesan on top until melted
– Plate up with mushroom as the base, then relish, spinach, tomato, pesto aioli, burger and another mushroom on top
– Serve with salted kale chips on the side and enjoy!
