Our go to breakfast on the weekends is usually my buckwheat pancakes or poached eggs but last weekend I tried something totally different and made this quinoa berry breakfast.
It was such a great sweet breakfast, the light quinoa flavoured with berries went perfectly with some natural yoghurt, fresh berries and raw almonds.
The twins loved this breakfast and quinoa is so good for you it will keep you going all day, I will defiantly be making this recipe again.
What you’ll need (serves 2)
1/2 cup quinoa
1/4 cup frozen mixed berries
1 1/2 tsp agave
1/2 cup mixed fresh berries
1 tbsp chia seeds
3 tbsp natural yoghurt
handful of raw almonds to top
– Add quinoa, 1 tsp agave and frozen berries to a saucepan with 1 1/2 cups of water
– Boil until quinoa is fully cooked (approx. 15-20 minutes) adding extra water as the quinoa cooks if needed
– Mix berries with chia seeds and 1/2 tsp agave
– Serve with natural yoghurt, berry mix and top with halved raw almonds and enjoy!
