Rainbow Fruit Salad

We have have guests visiting from Australia this weekend and we all had a few wines last night and were in need of a bit of a health kick this morning!

I went to the local markets stocked up on all the fresh tropical fruits i could find and whipped up this stunning rainbow fruit salad with berry and chia yoghurt, It was such a great healthy start to the day!

What you’ll need (makes enough for 4 adults & 2 bubbas)

2 plums
1 mango
1 peach
1 banana
1 apple
1 dragon fruit
handful of grapes
handful of blueberries
1 mandarin
1 cup water melon cubes
Juice of 1/2 orange
1 cup natural yoghurt
1 handful mixed berries
1 tbsp chia seeds
squeeze of orange juice

How to

– Wash and Chop all fruits into small pieces removing seeds
– Place in a large bowl, squeeze orange juice over the top and mix together
– Mix yoghurt, chia seeds, mixed berries and a squeeze of orange juice together
– Serve a scoop of fruit salad topped with yoghurt mix and enjoy
