Raspberry and White Chocolate Cheesecake Slice


I’ve always loved cheesecake, I mean cheese & cake are 2 of my favourite things, put them together and you have this beautiful light creamy baked raspberry and white chocolate slice that will satisfy anyones sweet tooth.

This is the perfect slice for afternoon tea or party slice (or in my case as a I’m pregnant so just because slice!)

What you’ll need

1 pack scotch finger biscuits (these are an Aussie biscuit but you can luckily find them in Cold Storage too!)
120-150grams butter melted
1 & 1/2 blocks of Philadelphia cheese softened
1/2 cup sour cream
1/2 cup caster sugar
2 eggs
100 grams white chocolate
1 cup frozen raspberries thawed

How to

– Line a slice tin or baking tray with baking paper
– Take philly cheese out of the fridge to soften for later
– In a food processor or powerful blender crush biscuits finely
– Melt butter and mix melted butter and crushed cookies together in a bowl, don’t add all the butter at once leave some to see what the consistency is first (you need to be able to press the mix with your fingers and for it to stick together)
– Add biscuit mix to the slice tin evenly and press down with fingertips to form the slice base
– Refrigerate slice base for 30 minutes
– Pre heat the oven to 160 degrees C
– With an electric mixer or food processor combine sour cream and Philadelphia cheese and mix on high until smooth
– Add sugar and eggs to the mix and blend until combined
– Chop the white chocolate into small pieces (about 1/2cm square) and sprinkle on the slice base evenly
– Sprinkle thawed raspberries on the slice base evenly
– Cover base with cheesecake mixture and smooth out evenly over the chocolate and raspberries with a spatula
– Bake in the oven for 20-25 minutes (you don’t want to let it brown though just be set when you move the tin)
– turn the oven off and leave the door open until cool, once tin is cool enough you can cool fully in the fridge
– Cut into squares and serve with some icing sugar sprinkled on top and a cup of tea of course!
