Smoked Salmon and Avocado Flat Breads

I love smoked salmon and smoked salmon and avocado is the perfect combination! Add some feta and rocket to that and you have these amazing flat breads.

This is a great quick and easy recipe for a healthy delicious lunch or great to make a few as a starter for a dinner party. It is full of summer flavours that work so well together and will be a guaranteed hit!

What you’ll need

2 wholemeal wraps/flat breads (I use my chia and flax tortilla recipe for these)
50 grams feta
1 tbsp olive oil
1 tbsp lemon juice
1 clove crushed garlic
Sea salt and cracked pepper
1 ripe avocado
1 cup rocket
100grams smoked salmon

How to

– Pre heat the oven to 180 degrees C and line with baking paper
– In a small bowl mix together the crushed feta, oil, lemon juice, garlic and generous sprinkle of salt and pepper
– Place flat breads on the baking tray and spoon the feta mix evenly onto both
– Bake in the oven for 10 minutes of until golden and crispy
– Serve topped with sliced avocado, sprinkled smoked salmon and rocket leaves and enjoy
