I have been busy putting together my new cookbook – Family Favourites and been a little slack on the posting up recipes so thought it about time to post some good recipes!

This superfood slice is such a great treat to have in the fridge. I have such a sweet tooth and come 3pm most days I really crave a sweet fix which this slice hits the spot perfectly. It’s full of superfoods and has such a great flavour. Always a good one to have in the fridge on hand for when unexpected guests drop in.

Ingredients
  1. 10 Medjool dates, pitted
  2. 1 tbsp raw white quinoa
  3. ¼ cup cranberries
  4. 1/3 cup pecans, chopped
  5. 1/3 cup almonds
  6. ¼ cup pistachios
  7. ¼ cup pumpkin seeds
  8. 2 tbsp chia seeds
  9. 2 tbsp flaxseeds
  10. 3 tbsp coconut oil
  11. 1 tbsp raw cacao powder or cocoa
  12. ½ cup good quality dark chocolate
Instructions
  1. Cover dates with water and soak for 30 minutes
  2. Add quinoa, cranberries, nuts and seeds together in a mixing bowl
  3. In a blender or food processor blend drained dates, coconut oil and cacao powder
  4. Add the date mixture with the dry ingredients and stir until fully combined
  5. Press the mixture into a slice tray lined with baking paper (you can make this as thick or thin as you like) and place in the fridge
  6. Melt the chocolate with a dash of coconut oil and pour over the slice. Return to the fridge until slice has set
  7. Store in the fridge in an airtight container
