Sweet Potato Veggie packed individual Shepherds Pies with Quinoa Salad

I made these individual shepherds pies for the family last night and gave them to the twins again for lunch today. They were a huge hit with the whole family and I packed them full of extra vegetables.

For those who have fussy toddlers who don’t want to eat their veggies these are perfect. Served with a rosemary and orange quinoa salad (which is now my new favourite combo!) this is a great easy mid week meal.

I made a huge batch of the mince mixture so I can freeze some and next time Im out of ideas on what to cook all I need to do is take out the mince mix, boil some root vegetables for the mash and pop them in the oven!

What you’ll need (this mince mix makes enough for 5 individual pies and left overs to freeze)

1 kg lean beef mince
1 cup cooked kidney beans or 1 tin
2 zucchinis
2 carrots
10 mushrooms
2 cups spinach leaves
1 brown onion
1 clove garlic
5 stems oregano
8 basil leaves
2 tins tomatoes
1 cup homemade pasta sauce (http://carrotsticksandcravings.com/pizzapasta-sauce/ )
Cracked pepper

For the mash topping

3 sweet potatoes
1 large parsnip
2 carrots
1 potato
1 stem rosemary
1/2 cup grated tasty cheese

For the quinoa salad

1 cup cooked pearl quinoa
Handful rocket leaves
2 rosemary stems
1 orange
1 corn cob
1/2 red onion

Dressing

1/2 tsp dijon mustard
2 tbsp apple cider vinegar
2 tbsp lemon juice
1 tbsp flaxseed oil
Salt and pepper if desired

How to

– Pre heat the oven to 180 degrees C
– Peel and chop mash vegetables and add to a large saucepan of boiling water with rosemary stem
– Heat coconut oil in a deep frying pan
– Brown onions and garlic
– Add mince and separate with a wooden spoon until browned
– Add grated carrots, zucchini and diced mushrooms
– Add kidney beans, tin tomatoes and pasta sauce and let boil (add some extra water if needed)
– Reduce heat and simmer covered for 20 minutes
– Add spinach leaves, chopped herbs and cracked pepper and remove from the heat leaving the lid on
– Once vegetables are cooked, drain the water and mash
– Put mince mixture into individual ramekins or a large casserole dish
– Top with mash and grated cheese and put in the oven until cheese is melted
– To make the salad add cooked quinoa, corn kernels, diced red onion, rocket, peeled cubed orange and chopped rosemary to a salad bowl
– Mix all dressing ingredients in a jar and pour desired amount over the salad and toss
– Serve pies hot with a side of the salad and enjoy!
