Thai Style Chilli Chicken Skewers with Brown Rice Salad

Tonight I decided to make these amazing Thai style chilli chicken skewers with a brown rice salad, the marinate for the chicken skewers is my sister Carla’s famous chilli fish marinate so she can have all the credit for how amazing these taste!

You can use this marinate for fish which is what it is meant for and its amazing, although I’m really fussy when it comes to fish and pretty much only eat salmon, tuna and flathead tails (which I cant seem to find in Singapore) so tonight I mixed it up and used the marinate for chicken skewers and paired them with a brown rice salad which was so good!

These skewers would be perfect for BBQs also or for a mid week easy meal.

What you’ll need (for 2 people)

2 chicken breasts
1 small red chilli
1 larger red chilli
2 spring onions
1/2 lemon grass stalk
4 springs coriander
1 clove garlic
2 kaffir lime leaves
1/2 tsp turmeric
2 tbsp sweet chilli sauce
2 tbsp lime juice
1/2 cup coconut milk

For the salad

1 cup cooked brown rice
1/2 red bell pepper
1/2 red onion
1 large red chilli
2 springs coriander
1/2 cucumber
1/2 cup cherry tomatoes
1/2 cup toasted cashews
Handful spinach leaves

For the dressing

2 tbsp apple cider vinegar
1 tsp sesame oil
Juice of 1 lime
1 tsp soy sauce

How to

– Pre heat the oven to 180 degrees C
– Finely chop the chillies, spring onion, lemongrass and coriander and place in a bowl
– Add the garlic, turmeric, sweet chilli, lime juice and coconut milk and slightly torn kaffir lime leaves to the bowl
– Cut the chicken breasts into 1 inch long strips and skewer them (no need to skewer them if you are baking them but I did anyway)
– Place the skewers in an oven dish and pour the marinate over covering them completely
– Bake chicken for 15-20 minutes
– To make the salad add cooked brown rice, spinach and diced cucumber, tomatoes, bell pepper, chilli, coriander and red onion to a salad bowl
– Toast raw almonds lightly in a pan without oil and add to the salad mix
– Mix all dressing ingredients in a jar and pour over the salad
– Serve skewers with salad on the side and enjoy!
