Turkish Style Lamb and Eggplant Pizza with Red Pepper Hummus

I’ve been playing around with lots of different pizza recipes lately and these Turkish style pizzas are quickly becoming one of my favourite.

This is a great mid week meal, my husband loves them and so do the twins (I just take out some of their mince mixture before adding too much spice)

What you’ll need

300 grams lamb mince
1 small eggplant
1 tbsp oil (I use coconut oil)
1 red onion
1 tsp chilli flakes
1 clove garlic
1 tbsp cumin
2 tsp paprika
2 tsp dried oregano
2 tbsp chopped coriander
2 whole meal wraps
Grated cheese
Rocket leaves
3 tbsp natural yoghurt
1/2 clove garlic
1 tbsp lemon juice
Salt and pepper to taste

How to

– Pre heat the oven to 180 degrees C
– Chop the eggplant into 1cm cubes and dice the onion
– Add oil and a sprinkle of cumin and paprika to a bowl and toss through the red onion and eggplant
– Put eggplant mix on a baking tray in the oven for 15 minutes
– In a frying pan cook lamb with garlic, paprika, chilli, cumin and oregano
– Add the coriander and the baked eggplant mixture to the lamb mixture and continue to cook over medium heat until lamb is fully cooked
– Put wraps in the oven for 5 minutes until slightly crisp
– Remove from the oven and top wraps with cheese then the lamb mixture and a sprinkle more cheese on top
– Return the pizzas to the oven until cheese is melted and golden brown
– In a small bowl add yoghurt, 1/2 clove crushed garlic and salt and pepper
– Once pizzas are cooked top with rocket, yoghurt and red pepper hummus and enjoy!
