Veggie Packed Sausage Rolls with Tomato Relish


The kids love these sausage rolls and so do I, they are jam packed with extra vegetables and are great for kids birthday parties too.

I made a big batch and froze some, the best way is to freeze them on something flat as soon as they are rolled and then transfer them to zip lock freezer bags.

What you’ll need

400 grams of lean mince
3 sheets of puff pastry
1/2 cob of corn
1 grated carrot
1/2 grated zucchini
1/2 diced brown onion
1 tsp chopped parsley
1/2 tsp dry oregano
1/4 tsp paprika
1/4 cup of peas
1 egg
1/4 cup of sesame seeds
Tomato Relish to serve ( )

How to

– Grate the carrot, zucchini and remove corn kernels from the cob and add to a bowl
– Dice onion and chop parsley and add to the mixing bowl
– Add peas, mince, herbs and spices and mix together
– Cut the puff pastry sheets in half
– Mould the mince mixture into the middle of the pastry vertically
– In a bowl whisk an egg
– Roll the pastry over and seal with egg
– Brush egg over the top of the rolls and top with sesame seeds
– Cut into 4cm rolls and freeze or bake
– bake in the oven for 20-25 minutes on 180 degrees C
– Serve hot with relish and enjoy!

    These are really nice, we skipped the sesame seeds on top and use our own home made tomato sauce but loved your variations
