Wholemeal Cinnamon Scrolls

My whole family love cinnamon buns – who doesn’t! I love recipes that l can get the kids helping in the kitchen as much as possible so anything with a rolling pin and dough that doesn’t take too long is a winner in our house!

I make these for the kids school snacks probably once a month or so, they’re great warmed up with a cuppa in the afternoons for a little sweet treat and they taste amazing! The regular version to these Cinnamon Scrolls white flour and lots of caster sugar so I’ve substituted wholemeal flour and some coconut sugar but they still taste delish without too many nasty ingredients.

Wholemeal Cinnamon Scrolls

Ingredients
  1. 2 – 2 1/2 cups wholemeal flour
  2. 7g active dried yeast
  3. 2 tsp baking powder
  4. pinch salt
  5. 1 tbsp butter
  6. 1 tbsp coconut sugar
  7. 3/4 cup milk
  8. 1/2 cup raisins
Filling
  1. 2 tbsp butter, melted
  2. 1 – 2 tbsp cinnamon
  3. 1/3 cup coconut sugar
  4. 2 apples thinly sliced (optional)
Frosting
  1. 1/4 cup cream cheese – softened
  2. 1 tbsp raw honey
  3. Juice 1/2 orange
Instructions
  1. In a mixing bowl add 1 1/2 cups of flour, yeast, baking powder, salt, butter, milk and coconut sugar and mix together (use a mixer with dough hook if you have one otherwise by hand is fine).
  2. Add more flour as needed. You want the mixture to not stick to the sides of the bowl and be a soft dough.
  3. Knead dough with dough hook or by hand for 5 minutes.
  4. Pre heat the oven to 180 C and oil a large cake tin or baking dish.
  5. Rest dough covered in the bowl for 30 minutes.
  6. Roll dough out onto a floured surface into a large rectangle about 1/2 cm – 1 cm thick.
  7. Mix cinnamon and coconut sugar together.
  8. Brush dough with melted butter covering the whole surface and top with cinnamon sugar mixture (make sure every part is sprinkled with the mix).
  9. Roll dough into swirls and cut into 1 – 1 1/2 inch scrolls.
  10. Place scrolls in tin next to each other and bake for 17-20 minutes.
  11. Make the frosting but whisking frosting ingredients together until smooth and drizzle on top of cooked scrolls.

    Super easy. Lovely dough. I only used half the amount of filling so they were not very sweet and I also did not put on any frosting but my kids ate them and I like them so I am happy 🙂 Next time I will put more filling 🙂 It also didnt roll out very far but once rolled and cut it made about 15 rolls.
