Spicy Tomato Relish

This is another basic favourite in our household, we use this spicy tomato relish for everything from scrambled eggs to dumplings, tacos and burgers.

It is a really simple recipe and you can make it as sweet or as spicy as you want, I usually double or triple this recipe and do a big batch as it will last refrigerated in an air tight jar for 1 month.

What you’ll need (makes 1 cup of relish)

6 ripe tomatoes (or tined tomatoes if you are time poor)
1 red onion
2 cloves of garlic
1 large red chilli
4 small green chillies
1 tbsp apple cider vinegar
1 tbsp brown sugar

How to

– Finely chop tomatoes and red onion
– Add all ingredients to a saucepan and bring to the boil stirring occasionally
– Reduce heat and let the relish simmer for 30 minutes
– Allow to cool and store in air tight jars refrigerated
