Greek Lamb with Quinoa Tabbouleh, Haloumi & Tzatziki

I have been wanting to get this recipe up for months but every time I try the plate is eaten clean before I remember to take a photo!

I love Greek food, and turkish food – pretty much anything with garlic yoghurt on it and sign me up! This recipe is a bit of a mix of greek and turkish and is simply amazing, We can’t get enough of it in our house.

Its a great fresh meal that the whole family loves, who doesn’t love lamb & squeaky haloumi cheese? I made this in a big batch the other week using lamb backs trap on the BBQ instead of the chops and it was a huge hit!

What you’ll need (for 2 + 2 toddlers)

8 lamb chops
1/2 spring rosemary or 2 tsp dried rosemary – usually I just use dried as its always in the cupboard but today I had fresh rosemary in the fridge and fresh is always better for herbs
1 large clove crushed garlic
1 tsp all purpose seasoning
1 tsp dried marjoram
1 tsp dried oregano
1 tsp dried parsley
1/2 tsp dried sage
1 tsp pink salt
1 tsp pepper
1 tbsp olive oil
1 tbsp lemon juice

1/2 cucumber grated
1 clove garlic
1 tsp lemon juice
Salt and Pepper
1 tsp chopped mint
3/4 cup yoghurt

1 cup cooked quinoa
1/2 diced cucumber
2 diced tomatoes
1/2 diced red onion
2 tbsp chopped fresh mint
2 tbsp chopped fresh flat leaf parsley
Juice of 1/2 lemon
1 block haloumi

How to

– Mix the rosemary, crushed garlic, salt, pepper, olive oil, all purpose seasoning, marjoram, oregano, parsley, sage and lemon juice together in a zip lock bag
– Add Lamb chops (or chosen cut of lamb, back strap also works perfectly) to the zip lock bag to marinate and set aside in the fridge – the longer the better even marinating over night would be good
– Mix the tzatziki ingredients together and set aside in the fridge
– Dice the remaining cucumber, tomatoes, red onion and fresh parsley and mint and add to salad bowl with the cooked quinoa & lemon juice
– On the BBQ or in a grill pan grill lamb chops until cooked to your liking and haloumi until brown and crispy
– Serve lamb on the tabbouleh with tzatziki on top & enjoy, you can even add some warmed turkish bread to scoop up all the flavours
