Green Quinoa Salad


We love salads in our house and this new one has been a favourite the last few weeks with my hubby and the twins.

This is the perfect salad for lunches, to take a big batch to a BBQ or to have for dinner with some dukkah crusted baked chicken or salmon.

What you’ll need

2 cups frozen peas
1 big head broccoli cut into small pieces
3 spring onions
1 large handful rocket
3 cups cooked quinoa
1 1/2 tbsp chopped basil
1 1/2 tbsp chopped mint
8 spears asparagus chopped into 1 inch peices
1/2 cup chopped almonds
1/2 block of feta
avocado (optional)


1/4 cup lemon juice
1 1/2 tbsp white wine vinegar
1 tbsp honey
2 tbsp olive oil
1 tsp lemon rind

How to

– Lightly steam the asparagus and broccoli and set aside
– Cook the peas and mix together with veggies
– In a bowl mix together veggies, quinoa, chopped spring onions,rocket, chopped herbs, almonds and avocado
– Mix dressing together and toss through the salad
– Crumble feta over the salad and enjoy on its own or pair it with some dukkah crusted baked chicken breast or salmon

  1. Great recipe! I was going around the net trying to find great recipes for quinoa and this one has to be one of my favorite! It’s simple and uses all of the ingredients I have lying around my kitchen! Way to go 🙂
