I love summer – who doesn’t! The produce is always better in summer, people are happier in summer and Australian summers were spent at the beach and eating fresh seafood and berries so what’s not to love!
This salad reminds me of all things summer using fresh berries and a great combination of sweet and savory this is a great salad that I often take to BBQs or have as a side at summer dinner parties and get togethers. Its beautiful and vibrant in colour, healthy and tastes absolutely amazing too!
What you’ll need
2 cups baby spinach
1 cup raspberries
½ cup pecans
10 basil leaves
2 tbsp extra virgin olive oil
2 tbsp orange juice
1 tsp orange zest
3 tbsp balsamic vinegar
Sea salt and pepper
– In a large salad bowl mixed together washed spinach, quartered strawberries, whole raspberries, diced mango and avocado and mix together lightly
– Add Chopped pecans and torn basil leaves
– In a small glass jar with a lid mix together the dressing ingredients.
– Toss dressing through the salad in small amounts, tasting as you go. Serve and enjoy!
