Well, summer holidays have come to an end and we are well and truly back to reality! My twins started at international school last week which is amazing as I now have more than 2 hours a day to try to get things done and they are so unbelievably happy now and run out of energy by the end of the day. The school they’re going to is nut-free (as most schools are these days) so I’ve been on a mission to create some delicious healthy nut-free snacks for them to take to school.
I spent today with my baby (who I can’t really keep calling a baby as she’s starting to walk now) in the kitchen with her throwing things on the floor and then eating things off the floor and me making these healthy school snacks for the twins lunch boxes for the week – and for the whole family really. These nut-free jaffa balls taste amazing and are full of superfoods to keep us and our little ones going all day!
- 8 medjool dates
- 1/3 cup water
- ½ cut rolled oats
- 1/3 cup sunflower seeds
- 1/3 cup pumpkin seeds
- 2 tbsp chia seeds
- 1 cup shredded coconut
- 1 tbsp cacao
- Pinch sea salt (optional)
- Zest of 1 orange
- 2 tbsp coconut oil
- Extra coconut for rolling
- Remove pips from dates and place in a bowl. Cover dates with water and set aside.
- In a food processor or powerful blender, blend oats, sunflower seeds and pumpkin seeds until small pieces (not so fine its powdered but roughly chopped).
- Add seeds and oat mix to a mixing bowl with chia seeds, coconut, cacao, sea salt and orange rind and mix together.
- Blend dates and water with the coconut oil until it forms a paste.
- Mix date mixture into the dry mixture until fully combined. With wet hands roll into balls then cover in coconut.
- Once all rolled, store in an airtight container and in the fridge to last longer.
