brocolli bites (1 of 1)

Your going to get sick of all my nut free recipes im sure but Im hoping that these are helpful for other mums who like myself struggle with new healthy ideas for kids lunch boxes

These easy and tasty broccoli bites are a great veggie packed lunch box filler and snack to have in the fridge for something quick and healthy when on the go.

What you’ll need

½ head of broccoli
½ cup grated zucchini
100grams ham
½ cup cooked quinoa
½ cup grated cheese (the more cheese the more the kids will love them!!)
1 tbsp coconut oil
¼ cup pumpkin seeds
½ tsp oregano
4 eggs
Sea salt and cracked pepper

How to

– Pre heat the oven to 200ºC and line a baking tray with baking paper
– Blitz broccoli in the food processor or blender to form small fine pieces
– Mix together with grates zucchini, diced ham, cooked quinoa, grated cheese, coconut oil, pumpkin seeds, oregano, eggs and salt and pepper and whisk together
– Spoon out small pancake like mixture onto the trays and bake in the oven for 10-15 minutes or until golden brown and cooked through
