Sweet Potato Falafels

These Sweet Potato Falafels are a great easy meal for the kids and perfect for lunch boxes or inside a yummy wholemeal wrap with salad. They’re bright, colourful, full of flavour and a great vegetarian option! You can make the patties bigger and fry them up like burger patties too.

  1. 2 sweet potatoes
  2. 2 cups tinned chickpeas, drained and dried
  3. 1 clove crushed garlic
  4. 1 tsp ground cumin
  5. 1 tsp ground coriander
  6. ¼ cup fresh coriander
  7. Sea salt and cracked pepper
  8. ½ cup quinoa
  1. Peel and cube sweet potatoes and boil in water until sweet potato is soft
  2. Add raw quinoa to a blender or food processor and blitz until it turns to powder
  3. Once sweet potato is cooked add to the blender with the quinoa, drained chickpeas, garlic, cumin, coriander, fresh coriander, sea salt and pepper. When combined, remove and set aside.
  4. Roll falafel mix into balls, if mixture is too wet add extra powdered quinoa
  5. Fry or bake the falafels until golden brown and serve with salad and tzatziki.
