Cinnamon and Maple Baked Sweet Potatoes

Living as an expat in Singapore for almost 5 years now, we have celebrated Thanksgiving every year with friends we have made here along the way. I love Thanksgiving – the comfort food, friends coming together to celebrate, the eating too much with said friends (I mean who doesn’t love turkey and pecan pie!) and it’s become a little tradition to celebrate each year with our American friends here.

I have been wanting to put up some of my reasonably healthy Thanksgiving side dish recipes to share everyone and I’m starting with these amazing Cinnamon and Maple Baked Sweet Potatoes topped with crunchy walnuts and coconut – they are absolutely divine and a must-try for any festive get-together!

Serves 8

  1. 4 large sweet potatoes
  2. 1 tbsp coconut oil
  3. 1 tsp cinnamon powder
  4. pinch salt
  5. 1/2 cup walnuts
  6. 1/2 cup coconut flakes
  7. 1 tbsp coconut oil
  8. 3 tbsp pure maple syrup
  9. 1 tsp cinnamon powder
  1. Pre heat the oven to 200ÂșC and line a tray with baking paper.
  2. Wash and scrub sweet potatoes to remove any dirt but keep the skin on.
  3. Pat dry and slice each sweet potato into small slices 1/2-3/4 of the way through.
  4. Mix together coconut oil, cinnamon and salt and cover each sweet potato with the mixture.
  5. Bake in the oven for 45 minutes or until sweet potatoes are golden on the outside and soft on the inside.
  6. Pan fry the walnuts and coconut flakes until golden.
  7. Mix together coconut oil, maple syrup and cinnamon.
  8. Once sweet potatoes are cooked, pour over the maple mixture and top with the nut mix and serve hot.
