green rice (1 of 1)This Green Rice Salad is such a great salad and always a staple in our house for BBQ or dinner parties or just a  great mid-week salad that will last for days as a side salad or for lunches. It’s filled with flavour and works well served with some grilled salmon or lamb chops – any protein really! Best made a few hours in advance and refrigerated to let all the flavours mix together.

  1. 1 cup brown rice
  2. 1/2 cup wild rice
  3. 1 large head of broccoli
  4. 4 spring onions
  5. 3 stalks celery
  6. 1 cup baby spinach leaves
  7. 1/2 cup coriander leaves
  8. 1/2 cup flat leaf parsley
  9. 1 green chilli (optional)
  10. Juice of 1 lemon
  11. 2 tbsps EVOO (Extra Virgin Olive Oil)
  12. Sea salt and cracked pepper
  1. Cook both types of rice together in a rice cooker or in saucepan and allow to cool.
  2. Dice broccoli into small pieces and cover in a bowl with boiling water for 2-3 minutes until bright green and par cooked.
  3. Chop spring onions and celery into small pieces and add to a large salad bowl.
  4. Mix through chopped spinach and finely chopped herbs.
  5. Add broccoli, rice and chilli if desired.
  6. Mix lemon juice, EVOO, salt and pepper together and mix through the salad.
