This is the perfect fruit and nut loaf for the festive season, filled with flavour and without the normal sugar crash that comes with most Christmas’ cakes!
Enjoy this Sugar-Free Fruit & Nut Loaf heated up for breakfast or afternoon tea (or whenever really) with a smothering of butter on top!
Ingredients
- 3/4 cup chopped dried apricots
- 1/2 cup raisins
- 1/4 up dried cranberries
- Zest of 1 orange
- 3/4 cup chopped walnuts
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch salt
- 2 cups almond meal
- 8 medjool dates
- 1 vanilla bean scrapped
- Juice of 1 orange
- 3 eggs
- 1/3 cup coocnut oil
Instructions
- Pre heat the oven to 150ºC and line a loaf tin with baking paper.
- In a large mixing bowl combine the apricots, raisins, cranberries, orange zest, walnuts, cinnamon, nutmeg, salt and almond meal.
- In a blender add the pitted dates, vanilla bean, orange juice, coconut oil and eggs and blend until smooth.
- Mix the wet and dry ingredients together fully and pour into baking tin.
- Bake for 1 1/4 – 1 1/2 hours or until skewer comes out clean.
