Grilled Veggie Salad


Being Australians, we pretty much BBQ everything and everyone knows I’m obsessed with salads! I love this Grilled Veggie Salad, you can use any veggies that grill well on the BBQ or in a grill pan and it will taste amazing.

  1. 1 small eggplant
  2. 2 zucchini
  3. 1 red onion
  4. 1 red bell pepper
  5. 1 clove crushed garlic
  6. 1 tbsp dried rosemary
  7. 1 tbsp dried thyme
  8. 1 tbsp dried oregano
  9. Sea salt and cracked pepper
  10. 2 tbsp good quality olive oil
  11. 1 cup cooked quinoa or brown rice
  12. 2 cups baby spinach leaves
  13. Juice ½ lemon
  14. 1 tbsp good quality extra virgin olive oil
  15. Crumbled feta cheese to serve
  1. Slice eggplant and zucchini into rounds and chop bell pepper into 1 inch cubes.
  2. Add veggies to a bowl with garlic, dried herbs, EVOO, salt and pepper and mix until veggies are evenly coated.
  3. Grill veggies on the BBQ until cooked.
  4. Mix salad together with quinoa, spinach, lemon juice and EVOO.
  5. Add grilled veggies to the salad and top with crumbled feta cheese.
