Marinated Butterflied Lamb

Those who know me know I’m a huge fan of a BBQ and entertaining! I love to grill marinated butterflied lamb as it feeds a lot of people and is always a huge crowd pleaser. This marinate with fresh herbs and nuts goes perfectly with any salad or BBQ sides and is super easy to prepare. I use butterflied lamb from The Meat Club – they fly in fresh beef and lamb from Australia and deliver it straight to your door, and the quality is amazing.   1. 2 cloves garlic
  2. 1 cup basil leaves
  3. ½ cup flat leaf parsley
  4. ¾ cup pistachio nuts
  5. 2 tbsp extra virgin olive oil
  6. 2 tbsp lemon juice
  7. Sea salt and cracked pepper
  8. 1.4kg The Meat Club butterflied lamb
  9. Quinoa salad and hummus or beet dip to serve
  1. Pre heat the oven or BBQ to 200ºC.
  2. In a blender, add garlic, basil, flat leaf parsley, nuts, oil, lemon juice, salt and pepper and process until it forms a paste.
  3. Coat the butterflied in the pesto mix and let it marinate for 2 hours in the fridge.
  4. On a hot BBQ grill or grill pan, sear each side of the butterflied lamb and then slide into the oven, covered in BBQ and bake for 10 minutes.
  5. Turn lamb and bake for another 10 minutes.
  6. Cover the lamb and allow to rest for 10 minutes before slicing and serving with salad and hummus.
