Quinoa Veggie Stirfry with Beef Strips

I am all about easy mid week meals, with 3 kids and them having more of an active social and sporting life than us, we tend to be very busy through the week and unless I am super organized, I am all about easy, quick to-go meals and this is one of them. The kids love quinoa, I tend to cook a few cups at the start of the week and have it in an airtight container so it’s ready to be used throughout the week. This is a really easy but super delicious recipe the whole family will love!

As always, I use beef strips from The Meat Club. I simply love that they fly in their meat fresh from Aussie and deliver it straight to your door. Saves me the hassle of going out to get these tender delights!

  1. 250 grams The Meat Club beef strips
  2. 1 tbsp sesame oil
  3. 2 tbsp tamari
  4. 2 cloves crushed garlic
  5. 1 large red chilli
  6. Sea salt and cracked pepper
  7. 1 cup cooked quinoa
  8. ½ head broccoli
  9. Handful snow peas
  10. Handful sugar snap peas
  11. ½ red bell pepper
  12. 4 spring onions
  13. 1 clove garlic
  1. Marinate the beef strips in tamari, sesame oil, crushed garlic, chopped chilli, salt and pepper and set aside in the fridge for 6 hours (I tend to do it first thing in the morning).
  2. Place quinoa in a medium saucepan with 1 cup of water, bring water to boil, reduce to low heat, cover and simmer for 15-20 minutes until most of liquid has been absorbed. Add more water if needed. Fluff with a fork and leave covered to cool
  3. Chop all the veggies into 1 inch pieces.
  4. Heat some sesame oil in a frying pan and sauté a clove of crushed garlic, add veggies, dash of extra tamari and ½ cup of water. Cover until veggies are par steamed.
  5. Add beef strips to a hot frypan and cook until browned (don’t over cook).
  6. Add quinoa to the veggies and mix through.
  7. Serve beef strips on quinoa and veggies with some extra chilli
