chilli con carne (1 of 1)

Need an easy cheap mid-week meal? This is a go-to in our house, It’s a great family sit down meal and a great pick and mix share meal where the kids can create their own colourful bowls of Chilli Con Carne goodness!

I do up lots of little bowls with different toppings to add with the chilli – brown rice for Eli and quinoa for Olivia (because as those with twins will know, both kids will never agree on liking the same foods!) with crunchy lettuce, tomatoes, avocado, cheeses and Greek yoghurt (the kids love it). The table always ends up a mess but the bowls are always licked clean! When making this as a family meal I reduce the chilli and add extra chilli flakes to mine and hubby when serving.

  1. 2 cloves crushed garlic
  2. 1 brown onion
  3. 1 red bell pepper
  4. 500 grams mince beef from The Meat Club
  5. 1 large red chilli
  6. 1 tsp chilli powder
  7. 1 tsp cumin powder
  8. 1 tsp chilli flakes
  9. 1 tbsp paprika
  10. 1 tbsp honey
  11. 1 tin diced tomatoes
  12. 1 tin black beans – drained
  13. ¼ cup tomato paste
  14. ½ cup water
  15. Sea salt and cracked pepper
  16. 2 tbsp chopped coriander
Added extras
  1. Lime wedges
  2. Guacamole
  3. Diced truss tomato
  4. Sour cream or greek yoghurt
  5. Grated tasty cheese
  6. Quinoa or rice
  7. Rocket or spinach
  8. Crunchy lettuce
  9. Grated carrot or raw beetroot
  1. In a non stick pan sauté brown onion, crushed garlic, diced chilli and diced bell pepper until onion is soft.
  2. Add beef mince with the chilli powder, cumin, chilli flakes and paprika and sauté until beef until cooked through.
  3. Add honey, tin tomatoes, tomato paste, black beans and water. Reduce to a low heat and simmer covered for 15-20 minutes.
  4. Season with sea salt and pepper and extra chilli if needed.
  5. Serve on rice or quinoa with chopped coriander and toppings of your choice.
