Beef Strips Burritos

Who doesn’t love a simple comfort food, or more accurately, what’s not to love about a burrito? Soft and warm, delicately wrapped in tortilla skin to contain juicy and mouth-watering fillings, burritos offer a flavorful experience with every bite. The slight kick brought on by the spice and the ever so subtle tanginess of rice and beans marinated in tomatoes is just what you need on lazy days – easy-to-make food that is bursting with flavour! What I love most about burritos is that it can be enjoyed both by yourself (in front of the tv, of course) or as a DIY meal when having a casual get-together or fun family dinners. There’s just something about laying out all the ingredients and having your kids or friends make their own burrito that makes the meal even more satisfying! This way, each one can make their burrito just the way they like it!

The meat you use in a burrito is just as essential as the marinate. I use Australian beef strips I get from The Meat Club.   1. 250grams The Meat Club beef strips
  2. 1 tbsp EVOO
  3. ½ brown onion
  4. 1 red bell pepper
  5. 1 yellow bell pepper
  6. 2 cloves crushed garlic
  7. 1 fresh chilli (small or large depending on spice preference)
  8. 1 tbsp sweet paprika
  9. 1 tbsp chilli powder
  10. 1 tsp cumin powder
  11. 1 tsp coriander powder
  12. Sea salt and cracked pepper
  13. 2 cobs of corn
  14. 1 clove crushed garlic
  15. ½ red onion
  16. 1 tbsp paprika
  17. ¼ cup goats cheese or ricotta
  18. Juice 1 lime
  19. Sea salt and cracked pepper
  20. 2 truss tomatoes
  21. 1 cup black beans
  22. ½ cup cooked brown rice
  23. zest of 1 lime
  24. 2 tbsp chopped coriander
  25. Wraps and avocado to serve
  1. Add sliced onion to a pan with EVOO, garlic and chilli and sauté until onion is almost soft.
  2. Add beef strips and spices and cook until beef strips are cooked through. Be careful not to over cook them.
  3. Remove corn kernels from the cob and sauté with diced onion, paprika and garlic in a separate pan until corn is golden.
  4. Remove from heat and stir through the goat cheese, salt, pepper and lime juice.
  5. Mix together diced tomato, rice, black beans, lime zest and coriander.
  6. Serve everything in separate bowls for people to make their own burritos!
