Energy Nut Balls

These are the best little energy nut balls to keep stashed in the handbag if you are anything like me and are running around with kids all day and all of a sudden it’s 2PM and you still haven’t eaten a proper lunch. I don’t know how but I had forgotten about this recipe until mum came to visit recently. She used to always make these for me and my friends to take with us camping or to festivals back in the day, she named them Helen’s Heavenly Nut Balls – well someone named them that along the way anyway! So great to have healthy snacks around the house so I don’t reach for the candy and chocolates!

  1. 1 cup raw almonds
  2. 1/2 cup hazelnuts or pecans (optional, if not just use extra walnuts)
  3. 1/2 cup of walnuts
  4. 1/2 cup sunflower seeds
  5. 1 cup grated/desiccated coconut
  6. 1/2 cup pumpkin seed
  7. 1/2 flax meal
  8. 1/4 cup chia seeds
  9. 1/4 cup sesame seeds
  10. 1/3 cup honey
  11. 8 finely chopped medjool dates
  12. 1 egg
  13. 3 tbsp coconut oil
  1. Pre heat the oven to 180 degrees C.
  2. Blend all nuts in a food processor leaving some chunky nut pieces.
  3. Mix all ingredients together until fully combined.
  4. Roll in some extra sesame seeds or coconut.
  5. Squeeze into balls as big or small as you like. If mixture is too dry add some more honey, if too damp add some extra nuts.
  6. Roll in some extra sesame seeds or coconut.
  7. Place on a tray lined with baking paper and put in the oven for 10 minutes until browned.
