- 2 cups rocket
- 4 fresh figs
- ½ cup lentils
- 4 springs fresh thyme
- 1/3 cup walnuts
- ½ red onion
- 100 grams haloumi
- 2 tbsp EVOO
- 2 tbsp Balsamic vinegar
- Spread rocket leaves onto a large platter.
- Top with sliced figs, lentils, thyme, walnuts and sliced red onion.
- Slice halloumi into strips and pan fry until golden brown.
- Place halloumi on salad and drizzle with EVOO and balsamic.
