Christmas Rocky Road


I love rocky road, and I love making homemade Christmas Rocky Road using different combinations and good quality chocolate. I whipped up a batch of this to have out on Christmas day and to give to all my chocolate loving friends! I added candy canes and Christmas flavours but you can be as creative as you like with combinations, It’s a fun thing to make with older kids too and they can choose their own add-ins.

  1. 1 1/2 blocks cadbury milk chocolate
  2. 1 1/2 block of good quality dark chocolate
  3. 2 tbsp coconut oil
  4. 1 cup chopped marshmallows or mini marshmallows
  5. 1/2 cup dried cranberries
  6. 3/4 cup pistachios
  7. 2 tsp orange zest
  8. 2 cherry ripes (can only buy in Australia, unfortunately. If you have someone visiting from Australia ask them to bring some for you, they are amazing!) Can also substitute for 1/2 cup cherries in syrup drained
  9. 1 cup candy canes chopped
  1. 1. Chop the marshmallows, cranberries, pistachios, candy canes and cherry ripes or cherries and add to a mixing bowl.
  2. 2. In a silver bowl, add chocolates and coconut oil and place on top of a boiling saucepan of water.
  3. 3. Stir chocolate until fully melted.
  4. 4. Add the orange zest to the melted chocolate and stir.
  5. 5. Line a tray with at least 1 cm sides with wax or baking paper.
  6. 6. Mix the chocolate into the mixing bowl and stir.
  7. 7. Pour onto the tray and refrigerate until set before chopping into pieces.
  8. 8. Keep refrigerated or frozen
