You can’t spell summer fun without popsicles! Popsicles are one of those must-have summer foods to cool you or the kids off from the sweltering heat. These fruit popsicles are super easy to make and healthy too as they are loaded with fruits and berries that are high in antioxidants so you won’t have to worry if your kid indulges in more than one.

Want to keep the kids occupied? Make a summer activity out of it and get the kids to help you make these icy summer treats!

Ingredients

  1. 2 cups coconut water
  2. ¼ cup strawberries, chopped
  3. ¼ cup mango, diced
  4. ¼ cup kiwi, diced
  5. ¼ cup blueberries, chopped
  6. ¼ cup raspberries, chopped
  7. 1 tsp mint, chopped
  8. OR
  9. 2 cups coconut water
  10. ½ cup pineapple, diced
  11. 2 kiwi fruits
  12. ½ cup spinach leaves
  13. 1 tbsp chia seeds

Instructions

  1. 1. Layer fruit of different colours into popsicle molds.
  2. 2. Fill molds with coconut water and freeze.
  3. OR
  4. 1. Blend all ingredients together (set aside some kiwi slices).
  5. 2. Line popsicles with slices of remaining kiwi fruit.
  6. 3 Top-up popsicles with juice and freeze.
